Like aaron... I live in Las Vegas, and seeing someone famous really depends on what you consider famous, and where you locate yourself. People who are constantly in the lime light don't tend to travel in the same circles as the general public in Las Vegas. There are special areas, back doors, and even seperate dining areas that people of a high profile frequent as to not be caught up in the crowds. They are here on vacation too most of the time, and it's not really much of a vacation when everyone is stopping you for autographs. You can check the high roller areas, but if you see someone famous, it is either because they are somewhere, and want the publicity, or you got lucky.

Years ago I worked at a TV station in Las Vegas and I got to meet and know just about every famous person that came through the station because I had a Convertable and the Station had me deliver them to their hotel in style.
Talk about feeling 50 feet tall. Nothing would beat pulling up at the front entrance to a Strip Hotel to let off some like Jerry Lewis or Dean Martin or Van Meader or whoever was headling there that week.

I've only seen one famous person. It was some guy off of Law and Order in the Forum shops at Ceasar's Palace.
If you want to see celebrities go to the Palms, Wynn, Ceasar's, Bellagio, or the Venetian. You can sit outside some of the ritzier restaurants or stores and people watch. Even if you don't see celebrities I'm sure you'll see others that are very interesting looking.

a lot of "famous" people come to Las Vegas because they can blend in. Willie Nelson was here this weekend and nobody noticed until he made it known.
Faith Hill and Tim McGraw are here often and never get mobbed because Faith dreses down and Tim, well he looks like a farm boy without that hat on.

Let's see I have seen Rod Stewart, Bobby Jackson a pro basketball player ( not really famous but a lot of people know him). I have seen a pro poker player playing poker at the hotel I was staying he goes by the nickname "The Grinder" I can't spell his last name. I seen Pete Rose (baseball player) signing autographs at one of the shops in Ceasers Palace.

I saw Hugh Hefner's girlfriend Kendra when we were there in May. But that was it, and we were there a week. I'm sure you can plant yourself in some of the places people mentioned and come across someone.
Pure nightclub in Caesar's usually has some celebs every night.
