I received a person check for work done for a friend of a friend at a check cashing place, they cash the check, now they are suing me because of insufficent funds on the check.

They are suing you because the check bounced? As it stands now, you have the money from the check cashing place, and your friends' friend still has the funds they were supposed to pay you - so the check cashing place is out the money You need to pay the check cashing place back and recover the money from your friend's 'friend" this time, preferably in cash.
