Forty Year Old Virgin is the absolute best (recent) romantic film. Most of the films you listed are rather lame, "chick flicks" which pander to audience expectations.
Sorry. I don't mean to be a jerk, but with the exception of Edward Scissorhands, the other films are very pedestrian and have little depth.
Have you seen the Italian film, "The Postman"? Absolutely brilliant.

The Notebook...have you seen it? Oh so great. I like Untamed Heart and Shakespeare in Love too.
Pride and Prejudice...the latest version leaves me with wonderful romantic feelings also.
Definitely, see The Notebook though.
