You don't see pidgeons because you don't look in the right place. The common "rock pidgeon", in urban surroundings, makes a nest high up on buildings. The baby stay there until they are ready to fly away. So you won't see a parent pidgeon leading her offspring around like you see with ducks.
Squirrels, being mammals, feed their babies with milk until they are large enough to eat the typical squirrel fare. The babies don't move around much until it is time to forage, and there is probably enough goodies stored up to postpone that event for a while.

Heck, I have never seen a pidgeon, you lucky dog. Pidgeons are very rare and live on a tiny island in the middle of the Pacific.

Pigeons are altricial birds, i.e., they stay in the nest until they can fly. Pigeon young are hatched at 18 days. They stay in the nest till they are about 30-35 days old. When they fly for the first time, you can often see them in flocks among the adults if you know what to look for. Young pigeons have little if any iridescence on the neck. They still often squeal when they chase their parents or other adult trying to con them into feeding them. Their feathers are a bit duller than the adults and their tail feathers often have a slight point to them - where the down was attached.

Because they cannot fly until nearly fully developed - until then they stay in the nest. Also they are extremely fast growing and that is the same for squirrels - we see the babies but by then they are nearly full grown.
