There are a few big keys that a number of scouts look for, depending on the teams (as each time has its own opinion of what position players ought be doing).
1) Defense. Good blocking mechanics, good footwork behind the plate, throwing form, arm strength, etc. The standard. But remember, mechanics, footwork, and form are all the most important, because arm strength can always be developed.
2) Offensively. I mean, always a secondary aspect of the game for catchers, the better you hit, the more appealing you will be.
3) Intelligence. Yes, you need to be a smart player. know the game, know how to call a well pitched game. If you show leadership on the field, and an ability to think like a manager, you're a few steps a head of most HS players, and will definitely be a way to draw attention.

Good defense, meaning holding runners and having good range. The most important is being able to call a good game. Then of course offensively, the same thing they look for in any hitter. Whatever you are good at, whether you have speed, a good eye at the plate, power, stuff like that.

Release time is a big one too, time they catch the ball until they release it to throw out an attempted stolen base.
