That is a wonderful question provoking deeper thoughts.Star!!

What we want can either be a need or a desire.

Needs are determined by the biological and physical requirements for survival and efficiency (in any case, efficiency too is a need for survival).

Desires (not the narrow definition relating to lust, which is actually a need and not a desire in its broad sense)..... these are driven by ego, the awareness of self as distinct from all else which shapes us in terms of our attitudes, likes, dislikes, emotions, ideas, imagination etc..... and these attributes interact with the external environment to give birth to the various and numerous desires in our mind.

In conclusion, thus, we want what we want in order to protect and satisfy our existence and ego.

Want is DESIRE. Desire is subject to the law of survival: escape pain, seek pleasure. The object of desire may be different from person to person, but the goal is the same: escape pain/seek pleasure.

The pleasure-pain mechanism has a long evolutionary history. What the lion wants or desires for its survival is entirely different from what the zebra wants. That is determined by the genes of each species.

In humans, our survival comes from the conceptual brain. We must think what, among millions of choices, is in our best interest at each moment of our waking hours. For some it is better to want a job in a high-rise building; for another it's more pleasant to be working on a farm. As long as we can live and improve our life with what we choose to do or have, the objects of our desire may be different, the purpose is the same.

Because I've been culturally trained to...

For example I might want a hot dog. But a person from some remote tribe in Papua New Guinea might think hot dogs are disgusting (if they even knew what they were) and prefer the taste of raw deer (which I would think is disgusting).

What I want I realize is not always what I need. Once my basic needs are full-filled the rest of my time and desires are the ones I want filled.

i'm not saying this doesn't apply to me, but it's just human nature.

We are greedy by nature. We want it because we don't have it. And when we have it, it's not enough for us, we'll want something else.

Because, I want it.

I want it because I don't have it.

I don't have it because that's God's way of saying we're just his followers and nothing specific comes after.
