Peter Pan and Treasure Island come to mind. You usually can't beat the classics!

There was a really good historically-based fantasy-comedy I once read. It was about a young man from Europe who was training to be an assassin and was captured by pirates in southeast Asia. Excellent story - I remember the details about the pirates seemed particularly realistic - but I don't remember the book title or author.

There's always the great classic of Robert Louis Stevenson's "Treasure Island."
Also, "Pirates!" by Celia Rees is a good choice.
If it doesn't have to be pirates but just sailing stories, then check out:
20,000 Leagues Under the Sea
Kidnapped
Moby Dick
Jaws
Gulliver's Travels
Robinson Crusoe

the bloody jack series is pretty good. the books are called bloody jack, curse of the blue tattoo, and under the jolly roger (there's a fourth one too, i think it is something like in the belly of the monster???? something like that.)

also try Pirates! don't remember the author. about a girl and a slave from a sugarcane plantation both becoming pirates... it was really good.

there was also a book called voyage of the arctic tern. not exactly pirates, but it was a really good book with a twisted ending and it was written completely in poetry but the poems were really readable.
