I want to take a nice exciting vacation to either Italy or Paris or even Africa. I am unmarried and single right now and I do not have any friends or family members that can either afford or have the time to get away and travel w/ me. So I'm wondering if anyone knows of companies that cater to individual or single travelers or have any suggestions. Thanks!

If you do not find a company you like to travel with, consider traveling alone.
I am a woman, and have been having holidays on my own the last 22 years.
I started using hostels, the easiest place to meet other people traveling alone.
Now I often stay with friends I met when traveling, and stay a couple of days in a town on the way there, using a hotel.

Hostels these days have private rooms, shared single sex dorms and sometimes mixed dorms, so ask for the option you like best, or just to be informed (about the chance of meeting the opposite sex when you open your eyes in the morning.
In a hotel you always get a private room, but at breakfast most people sit alone and do not want to talk with you, in hostels the meals are times to meet up with strangers and form groups to go into town or see the sights.

If you travel by train you will meet many people, and traveling alone you are easily able to make contact, if you start talking to a stranger you nearly always get an answer.

Traveling alone each country can be exciting without being dangerous.
You need to take care to store your money sensible, a money belt under your clothed for your tickets, a credit card and the money you are not going to use that day is good.
Take a debit card for money out of the ATM's (check with your bank how much they charge, as the machines here are mostly free of charge, if they ask more than a token fee ask around for a cheaper card,) and a credit card to use for hotel bills and emergencies.

If you travel in summer better book all your hostels and trains, better travel May/June or September/October and just book the first hostel or hotel after you arrive and get train pass for the country you choose or a bigger part of Europe.
If you take a Global Eurail pass you may pay more than you will travel, but it is a great thing to have.

I have always made my own reservations when traveling so I can choose what I want to see, when I want to wake up and eat, and sometimes I find that I like a country/city so much I spend a few extra days in one spot and skip another completely.
I have never been to Africa (how exotic) but in central Europe I've always had a great time and meet lots of friendly people.
