An intellectual conversation is usually about "intelligent" topics like art, literature, philosophy and such, but it's true that that's not all there is to it.
When you like intellectual conversations it can also mean you like to talk about ANY subject, even perhaps things you know nothing about and can voice an intelligent opinion, your own opinion, not something you've read or heard, just by reflecting on the subject and drawing your own conclusions, then discuss them with whomever you're conversing with and have an open dialogue. At least, that's how I see it!

An intellectual conversation can be about anything, not just space or fine arts. Intelligent conversation is when you actually put some thought into what you say, and probably do some analysis of various factors, or causes and effects. Like I said, it can be about anything, even celebrities.
Here is an unintelligent conversation:
Person 1: What do you think about Britney?
Person 2: Did you see her shave her head? That's nasty!
1: She's in rehab now.
2: Yeah, I heard that K. Fed and her mom made her do it.
Here is a possibly intelligent conversation:
1: What do you think about Britney?
2: I think it's really unfortunate, that our celebrity-obsessed culture has gotten to the point where we care so much about celebrities' daily lives that we drive them into emotional breakdowns.
1: Well, I'm not sure about that. I don't think it is the paparazzi's fault. She was obviously having problems with drugs, or alcohol, so it's not surprising that she hit bottom.
2: But she shouldn't have had drug problems anyway. If our society was different, she would be a pop star but have a perfectly happy life.
1: Society doesn't cause problems. Everyone has a different reaction to the events in their lives. It's all about psychology.
And so on.

It means you talk about more than celebrities and gossip. You'll talk about where the world is today and what it will be like in the future. You must draw on information based on research.
You must be well educated to have an intellectual conversation. That means you either paid lots of money to go to school (and LEARNED the material, not just remembered it for the test), or you go to the library and read about topics you're interested in.
So if you want an intellectual conversation, talk about your favorite book, philosophy, problems in society etc.

To me, it means to talk about more than gossip or chit chat. It seems to mean that you actually think about what you say carefully, not just agree or disagree. Politics, sciences, music, drama, art, etc. are all great topics. However, most intellectual conversations I enjoy are ones that analyze rather than like and dislike. You don't have to be supremely-educated to have an intellectual conversation. For instance, a person living in Japan and one in California could converse about Bush, and attempt to figure out why in the world he does what he does. Or any other president, for that matter. Sometimes, I find that intellectual conversations are very much like casual debates.

If you are a person who likes intellectual conversations, that simply means you can talk about science, art, history, literature, cuisine, travel, movies, culture, medicine, industry, etc. A person who can engage herself in an intellectual conversation is not limited by the topics about which she can talk.
We all know people who talk about the weather, and then after that, they are at a loss for words. One who has an overall knowledge of many things has a huge base from which to draw in order to keep the conversation rolling.

It means you like thought provoking talk. Or intelligent conversations, not just small talk. Some folks are incapable of anything other than small talk because of a poor education or refusal to observe the world around them.
