If you have young children, go to Legoland.
If not, try So. Carlsbad beach and other local beaches; it's a great time to go to the beach now.
For a fun time, really good pizza and craft beer on draft you gotta go to Pizza Port in Carlsbad. They're one of the top craft breweries in California, and they carry other breweries' beers on tap as well. Very informal setting and lots of fun. If you like really good pizza and really good beer you'd really like this place.
If you like craft beer also go to the new Stone Brewery in Escondido for their tour; be sure to make reservations for their restaurant there ahead of time for very interesting food and an unusual setting. Note that the tours sometimes fill up early on weekends but you should have no problems during the week I think. Call first. By the way, they don't charge for either the tour or the beer samples at the end of the tour either...can't beat that!.. Their restauant/bar usually has about 30 craft beers on tap. Stone is considered one of the top ten craft breweries in the country.
If you like margaritas, go for El Callejon in Encinitas. They have hundreds of kinds of Tequilla in their bar. They don't use bottled tequilla mix; you can watch them go thru hundreds of limes a day making their fresh from-scratch stuff. The food can be good or mundane. I really like their Cilantro Soup; very unusual, and if you like cilantro you'll want to give it a try. I also like their Mexico city style tacos; different probably than what you are use to.
Moonlight Beach in Encinitas is nearby and is a great little neighborhood beach where you can also get food and rent out boogie boards.
Other nice restaurant recommendations would include the Vigilucci's restaurants in Encinitas and Carlsbad.
You might enjoy visiting the Oceanside pier and visiting their beach one day; just up Coast Highway. You can rent out boats from the marina there if that interests you.
You might be interested in the small Museum of Making Music which is in Carlsbad, not far from Legoland and the CArlsbad Company Stores.
These are just a few ideas; I'm not sure what your interests are so I'm sure some of these ideas won't interest you. Oh, almost forgot to mention that the spa at La Costa is pretty well known if the ladies in your group would like a little pampering/massage/etc. Expensive but luxurious.
Also on the expensive end of things, you might enjoy a drive thru Rancho Santa Fe, one of the most exclusive communities in the U.S. There's an expensive, wellknown restaurant there called Mille Fleurs if you are looking to eat at a high end expensive restaurant.
I know this sounds a little goofy but I sometimes find its fun to drive thru RSF on Sundays and look at open houses for 4 million dollar houses for sale, poke thru the rooms and imagine living there, then figuring out which of these minimansions I'd prefer to buy. I realize most people would find this a little odd but I think it's fun.
If you play golf, spend a fortune at Aviara or La Costa courses. Aviara has great restaurants too. If you don't want to pay the $200 for golf, you can go to Encinitas Ranch Golf course for considerably less but then you are not on a beautiful PGA course. The new Carlsbad city course isn't open yet for a few weeks or months.
Nice hiking around Bataquitos Lagoon; nice to see wildlife, especially birds. Watch out for poison oak though.
If you want nightlife, the area around Carlsbad Villege Dr. has lots of fun places. If you are roudy though beware as police are responding to lots of complaints re this lately and you will be busted.
Want to shop? Carlsbad Company Stores is a high end outlet mall near the Flower Fields which has Coach, etc. stores. The Flower Fields are done blooming for the year so no point in visiting them.

Hi there! I'm sitting in my house in Carlsbad right now as a matter of fact. This morning there was a reverse 911 call that everyone here received that stated a "voluntary evacuation" was in place. My parents live in Rancho Santa Fe where there was a mandatory evacuation. As we drove from there, the sky was blackened out by smoke, ashes fell, and the smell of smoke made you feel like choking. Here, I can see blue sky. Carlsbad is a big city and I don't know where your friend is, but I feel fine right now. I am highly skeptical of the need for us to evacuate now or in the near future. The rest of the county is not in such good shape. And as the winds continue, thing could,of course,change. The link that the other poster gave you is a good one. Hope this helps!

You'll love Carlsbad! You can walk the beach area, either on the sand or on their very nice walkway that goes the length of the beach near town.
The village is quaint and there are shops, places to eat and night time entertainment.
If you go south, you can see Sea World, go into the city and you can find great places like an authentic pub, great places to eat, shopping, a warf, etc.
This place has it all! Carlsbad has one of the greatest libraries I've ever seen, on Dove Lane. They have free entertainment too, check the schedule, I caught a big name jazz musician in January that was great--and for free!
If you like the outdoors, hiking places are all around, water sports, boating, etc., etc. Enjoy!

Go to the Self Realization Temple in Encinitas off of the 101. It has gardens that are open to the public and built right on the ocean cliffs overlooking Swami's Beach. The views of the ocean are some of the best I've seen and the gardens are quite nice too.
Eat at Swami's - a cafe on the mountainside of 101 across from the temple, for breakfast and great coffee, or at Kealani's off D street for the best Hawaiian plate lunch outside Hawaii (imho)
