To network computers together does not require you to have a network connection at all.

The easiest way to do this is to purchase a router, a wired or wireless one, your choice, and connect the 3 computers through it.

Dial up has nothing to share files between your computers.
In your instance, what you can do is to purchase a switch. Onto the switch connect all the three computers with a straight through cable. Once that is done, ensure that all the three computers use the same IP range. Then enable file sharing on all 3 computers. This setup allows you to share any kind of files among all the three computers.

Onto one of the computer, you can connect your dial up connection's modem and use that to access your internet.

You can set up a home network with your computers. Just need to go get a router and set up a workgroup for your computers.

This has nothing to do with dial-up, that is a connection to outside your house.

You will need ethernet connection on all computers so you can connect them to the router.
.
In order to use the Excel files on other computers, you will need to install Excell on them or if you just want others to view them, you can get Excel viewer program from Microsoft's web site.

READ YOUR USER'S MANUAL.

You don't need internet to connect 'local' computers.
There are several ways.
The easiest, if they have ethernet connections is with an ethernet switch and cables.

You could also set up a wireless connection

To add internet, you can use an external modem ALSO connected to the switch or use 1 as access to the modem, (or a built in or add-on modem), and use the "ICP" program that is built in to windows.
The disadvantage is that THIS computer must be ON to access the internet, the advantage is you only need to set up one firewall.
