I want to be able to use them in fresh water during the summer and winterize them during the offseason. I'm not a mechanic and don't know a whole lot about them.

Buy some that are running well. To winterize; at the end of the season (Last Day) add some Fuel stabilizer to your tank and run them. Either turn off the fuel vale (You will see) or run them dry. Then next season fill with fresh fuel and have more fun. They really not that hard to maintain if you use fuel stabilizer or run them dry. You leave fuel in the Carbs with no stabilizer and then the gas evaporate and leave the oil to clog your Carburetor Jets.
For the batteries, disconnect at least one wire (Both if you want to remove). Once a month put a Battery Charger on them for a day, I charge on a low AMP setting like 2 AMPS. Then the Batteries be good to go also. Clean them with about a Teaspoon of baking soda mixed in a glass of water. It neutralize any acid on the outside of the battery. Next summer check the water level of your battery (Fall also) and top up with "Distilled Water" Nothing else like tap, use Distilled water. Less than $1 a gallon at stores.

I need to add. Spray all your Vinyl, Plastic, Any shift/steering exposed that move and rubber you can see with Silicon @ the first of the season. Many say Armarol (Spelling?), but, what you think it is? :-o Only more expensive. Ask an "Experienced Scuba Diver" what they use on their equipment; they will say Silicon Grease or Spray Silicon!
