We have some pansies planted outside, but our cats keep eating them! What are some non-poisonous (for the cats) flowers that I can replace the eaten pansies with that the cat's hopefully won't eat?

Catnip is always a good choice for cats and is in the mint family. However,
believe it or not, Pansies are edible. They won't hurt you or your pets. Here is a website I use all the time because I have a fascination with edible flowers. My herb garden looks like a flower garden because I include edible flowers in it including my all time favorite, the rose. Of course, I have roses everywhere, but that's beside the point. Oh, wait, you said..."won't eat" Sorry.
As for what the cats won't eat I think that will be just trial and error. I have two cat's and mine really don't eat anything except the cat nip and grass. Maybe if you plant catnip somewhere else they will be drawn to it instead of your flowers.

why replace the pansies just put down some pecan shells as a mulch the Shell's heart the cats feet

Marigolds would probably work.
