why their volume is less than that of the container...??

REASON IS ALWAYS SURFACE TENSION


adhesive and cohesive forces exist..........

LESS THAN 90---------VOLUME LESS(WATER)
MORE THAN 90 -------volume more (MERCURY)

ur question is a bit confusing as it has two meanings about the volume of the container is it the inner volume ie capacity or the whole volume. If it is the whole volume then the answer is simple because the volume of material of the container will also be included the volume of container is more.
But if its the first case then its the adhesive force b/w the container and water which exists and when the water is taken out then the adhesive forces are gone and only cohersive forces exist which decrease the volume of water

Those having an acute contact angle occupy less volume
