Generally we can say that plants make unsaturated fats. However, coconut and a few others like palm oil are saturated like the fats from animals.
Saturated fats have a lower solidifying point than fats with unsaturated fatty acids.
Saturated fats have no double bonds between the carbons, unsaturated ats have one or more double bonds .

The reason is that coconut oil contains saturated fatty acids and sunflower oil conains unsaturated fatty acids. Saturated fatty acids are solids at room temperature where as unsaturated fatty acids are liquid at room temperature. Dalda (Vanaspati) also contains hydrogenated vegetable oils which are basically saturated fatty acids.
