Thermometers and thermostats operate off of temperature. A siphon works off of pressure moving from hight to low. A barometer also operates with air pressure.

Bordon barometer operates on a diaphragm with coil and indicator that diaphragm will move according to pressure and move the coil for a small deviation of of a scale

thermometer - is used in temperature measure not in pressure. usually employs the mercury that expand with temperature. Other use the principle of temperature expansion of a material using coil.

siphon - could never operate if there is an entrance of air inside the siphon. usually siphon has a partial vacuum pressure at the summit and positive pressure near the ends of tube. No air pressure involved here

thermostat - this regulates the temperature of a conditioning system.

A siphon (syphon is another spelling) is a device which can transfer a liquid from a higher level to a lower level without using a mechanical pump and depends on air pressure to lift the liquid over the vessel's higher level edge.
