i m plannin to open it in mumbai or surat (in gujarat)......i got a partner who is willin to go wit me...so may i know the requirements or which points i need to look on for gettin ahead vit my plans..i need to first make a project for it n present it too financers ...so u can also recommend me from where i can gather the required information about it..thnx

There are dozens of concepts but it would be hard to come up with something totally new. You might try something from another country, it might be hard to get people used to something new but the tourist who know that food from home might like it and the locals may learn about it.

Ok! i am from Ahmedabad and i live for food.
Ofcourse i don't know the dynamics of managing a restaurant but i can tell you about good places liked by a foodie (vegetarian) :
Traditional Gujarati food: Aadhar, Rajwadu, House of MG (Ahmedabad)
Multi Cuisine: Havmor, Basil, TGB, New Yorkers
South Indian: Sankalp, Das Prakash
Punjabi: Mirch Masala
Terrace restaurants at Fortune Landmark, TGB. They are simply romantic.
Must have missed some
You can check their formats. But they are the best in here and very popular.
