If you would be otherwise authorized to use it, like for work, then it's legally not theft though don't expect your boss to draw such a fine distinction. Theft requires the intent to permanently deprive someone of their property, which is different from unauthorized borrowing. If anything happens to the car, however, you will be liable for "conversion" and be responsible for paying the cost of repair or replacement.

in all states, taking someones property without thier knowledge is theft, even if you intend to return it.
