Well, it really depends on how wet (compromised) the particle board got. It's really particle board, eh? Not the type of plywood that looks like chips of wood glued together? Particle board (upon close inspection) looks like sawdust glued together. Particle board doesn't stand up to weather at all. Whereas there are exterior grades of plywood, and most often contractors will use the type of plywood that looks like chips of wood all glued together (some light and some dark chips all intermixed). This type of plywood stands up to weather just fine, and it would be just fine after a rain to continue roofing on.
If he's using particle board, you'd better ask him right away why he's using such an inferior wood for your roof. There's no way that particle board would make a good roof.

It will be fine.
The adhesive used is generally water-resistant for that express purpose - to deal with one or two wettings. Yes, the fibers in the wood will expand slightly, but they will shrink almost exactly back to the original thickness. Any residual swelling will not affect the appearance or integrity of the roof.
This is, of course, assuming you mean OSB when you say "particle board". Other types of particle board made with sawdust rather than big chips like OSB, CAN be a little more sensitive to swelling with limited exposure to water, but even so, if it was only wet for a few hours, you're still probably okay.
Just be sure you have adequate ventilation in the attic after the job is done. There should've been vents there to begin with, and if any were on the roof surface itself, be sure the roofer re-installs them, or equivalent new ones.

The roofer is not a licensed person for he would never us particle boards that could capture water moisture for the roofing material. Have him remove the particle or if he resists to do so, get another roofer. It should be plywood, tar paper, then tile or a top sealer to finish. Hope it is not too late before any heavy rains.

Well, that really depends on how wet the particle board got. First of all, particle board on your roof isn't such a great idea anyway. You would have done better with plywood. Particle board tends to swell, and rot very quickly when it gets wet, but it all depends on how wet your roof actually got to know the answer to that question.

Particle board I think actually you mean OSB is actually more resistant to water than plywood because it is coated on top and plywood is not. It also is less likely to warp two of the reasons it has become so prevalent in building today.

This type of sheathing usually has an exposure rating of one week, which means it can be exposed to the elements for one week. Your roof should be in fine shape.
