jack dempsy will cause chaos! we had one who killed all of our oscars plus two or three pacu's. if you decide to put them together, be sure to divide the tank up with lots of tall plants, rocks, etc. its also a good idea to add a few feeders once in a while. just make sure they don't replace the fish' normal diet as you will risk them developing "hole in the head".

Generally speaking the best tank mate for an Oscar is another similar sized, similar temperament fish. Another Oscar will do, if it's not two males that will fight over territory. Some geophagus make good tank mates for Oscars as do severums and festivums.
As to your first question, others covered it well. The convict would probably get eaten and the Jack would bully the Oscar badly.
As to the Pacu, you don't have anywhere near the space needed for a Pacu. They get really huge and need a huge tank... think in the hundreds of gallons.

Labidichromis careulis are good with Oscars even though they are from different waters....Labs do well in the same water as an Oscar and also like to eat what the Oscar spews around, plus they eat snails. Oscars can be very wimpy. The jack will terrorise it. The convict may get eaten. I've kept angels very well with Oscars, also Boesmanii Rainbows. Many cichlids that aren't edible size work, but if they have fry, they terrorize the Oscars. My Oscars hid from convict babies so bad they got stuck behind the filter tube. I've also had Oscars make pets out of feeder goldfish they didn't feel like eating, so I raised guppies to feed them in a separate tank. That way, who didn't get eaten wasn't such a drain on my system and after awhile, I had a nice school of guppies as dither fish in there with the big ol' Oscars.

Everyone has spoken to the compatibility of one fish to another, but I think everyone has overlooked the compatibility of the quantity of fish to the tank size. The Oscar alone requires a tank size of around 70 gallons, so if you wanted an Oscar, you couldn't have any other fish in a 75 gallon aquarium. The Jack Dempsey requires about 50 gallons and the Convict Cichlid requires 30 gallons, so you could get by with keeping those two together, but you cannot have all three of these fish in a 75 gallon tank.
As to compatibility of species, it is recommended that with aggressive species as these fish all are, they should only be housed with other more aggressive fish of the same size or larger.
Thus, for compatibility of species and compatibility of tank size, you could house only one Oscar, period, or the combination of one Jack Dempsey and one convict cichlid that is larger than the Jack Dempsey.

the convict will get eaten when the oscar gets bigger but the jack dempsey will be ok

Oscars and Jack Demspeys-- if I am not mistaken - have teeth -- I worry about the Chiclid AND I worry about those otehr two fish tearing into each other. Check with the local acquarium supply store -- or email one.
