well, the idea would be put the body on a boat, set it out to sea and set it on fire... however I do believe that it is now highly illegal.. a home cremation is legal if you get through the loop holes, but setting fire to a boat that has been set to sea not really going to happen..
Here's the idea (from the movie Eulogy):

actually there were several types of burials and funerals in the viking age. the cremation burial which others have mentioned also requires a slave girl to be sacrificed to go with the dead chieftain. this is a wealthy and powerful mans burial. many could not afford ships ,or not the only ship the family owned. often these people were buried in graves marked with stones in a boat shape around them. almost always there were grave goods included in the graves. there were also burial howes or mounds. Like the barrows from the lord of the rings. these were burials were they would build a small chamber place the dead and grave goods inside and then pile earth around the building making an artificial hill.

The first post is correct, except she forgot the mead. Can't have a viking funeral without it! And you should also probably have a few war stories and some stuff about Valhalla.

back in norse times there were ships called funeral ships the coffin would be placed in the middle of the ship and after saying a few things about the person they set it on fire so that hel the godess of the dead and queen of nifelheim (underworld) would see the flame and come get the soul. if the person died in battle that is a different story when you are killed in battle a valkyrie appears and takes you to Valhala (the hall of odin) where you live like a king. i know everything about mythology

Just get some logs, hewn the wood into planks, build a ship, decorate it with intricate carvings, put the corpse on the ship, set it on fire, and push it out to sea. Piece of cake.
