I'll be attending college in one of these two cities and was wondering how they compared? I would like a comparison of architecture, natural beauty-scenery, weather, people, things to do,etc...

First should be the quality of the college.
That is going to influence your career in years to come.
Seconds should be cost, compared to loans, grants and living cost.
Next places to live, will you be able to live on a campus, in student housing or will you have to compete for the few rooms in the open market.
You might want to live in the middle of town, but if you can get a room on a campus, take it, as accommodation is a nightmare for many new students. (I do not know about the situation in Copenhagen, but Amsterdam has had a housing shortage since at least 1945, and students suffer as they are the ones who have little money, and have not been on a waiting list for the 6 or more years needed to get an apartment that is not too expensive.)

Only then come the things you mention come into play.
I am Dutch, live near Amsterdam and my sister used to live in a student flat in the center of town for a few years. So I am well aware what can be found there.
I have been to Copenhagen, but only for a short stay.

As far as I can see are both towns fairly even on the points you mention.
Copenhagen is near the sea, but Amsterdam is on the coast of our inland 'sea' and is near the North Sea coast as well.
Weather is alike, a little less cold in winter in Amsterdam, nearly never below freezing, but there are some years it does get cold too.
People, Amsterdam has the name of being the town where almost everything is possible, that does attract some free birds, but most of the people you meet are the normal students (however normal students are), locals, and tourists. But both towns have locals and tourists, so that is not that much difference either.

I like Amsterdam better, but it might be that I know it better.
