Monday is the name of a day of the week so that makes it a noun: a proper noun because it starts with a capital. But, i'm sure there are times when it could be used as an adverb.

I know feel this way sometimes (especially on Mondays:). But any weeekday will do.)
How are you feeling today?
I'm feeling very monday. I think I'll go back to bed.

An adverb describes a verb, adjective, or another adverb. It could be used as an adverb such as in the sentence "We are going Monday to the lake." You have to ask yourself when are you going to the lake, Monday.
