Yes, it was Echo who loved Narcissus, but she didn't disappear because of that - she was cursed, and therefore everything she said came back to her. Since no one would listen, she faded away into the mountains, and to this day she calls to you when you call to her.

I am not sure if this is the one your looking for, but in Greek Mythology Echo was a Nymph who was punished by a goddess and could only repeat everything she heard, she eventually died but her spirit remained and continues to eho others.

Besides Echo, there was also the Cumaean Sybil, who received very long life (900+ years), but neglected to ask for eternal youth, so she grew older physically for 900+ years, shrinking as she did until all that was left was her voice. (Or in some versions, she became a cicada, rather like Tithonus.)
I can't think of any man that the voice thing happened to.

There's a darker story to this myth.
It was said that Pan, the god of herds and flocks, once desired Echo but she fled her advances. The spurned god, to be revenged, had her torn to pieces by shepherds whom he had driven mad (he had the power to inspire overwhelming, irrational fears;panic, in men and animals) - torn so completely that only a fragment of the nymph's voice survived...
