I've been looking for a drop-down menu (flyout style) for my left nav, only thing is my website is centred so I don't think it can use absolute positioning. Please help!

Can do! You don't need absolute positioning! Go find some classic examples, complete with copyable code, and important discussions, at http://www.alistapart.com - also see the books cited.
