what i mean is, they still have the old wooden Saloon, barbers shop etc or have they all been replaced by more modern buildings. Europe has many buildings that are still used and date back hundreds of years.

Pretty much what you'll find today are replicas and tourist attractions for folks who want to see what life was like back in the days of the "Wild Wild West".

Since the original towns built with untreated wood simply would not outlast time and would become dilapidated, there probably wouldn't be too much "original" about them although there have been attempts to preserve what has remained of some of those old towns.

Like this one...
"Come be a part of the Old West as it really was. Enjoy the beautiful scenery as it was seen 100 years ago, from horseback."

or
"Ghost Town Museum is a fun and historic look back at the kind of old west town that used to dot this region during the late1800’s and early 1900’s."

I am certain there are others, but Cimarrón, New Mexico still has the St. James Hotel where Clay Allison and some others shot it out. The bullet holes are still in the wall. I don't think you will find a completely untouched town of the old west. Virginia City, Nevada would be a good place to look too.

Mogollon, New Mexico's held out fairly well, though there are doodad shops in the old general store and saloon.

Also Hillsboro, NM

Wood was the building material of choice back then, so there probably isn't much actually. But there are some re-creations around, I'm sure.
