The CD that is considered by many as the top jazz CD of all time is Miles Davis - Kind Of Blue. Its great. The band has Miles Davis, John Coltrane, Bill Evans, and Cannonball Adderley. Many of the songs have become jazz standards.
Another personal favorite is the Crusaders - Chain Reaction. I believe this is from the 70s. Larry Carlton and Joe Sample were in this band and are on this CD.

If you are not heavy in to Jazz I suggest you stay far away from Bitches Brew until you've learned to fully appreciate the music. Bitches Brew, though incredibly progressive may be a little too experimental for someone who is just getting into jazz.
Kind of Blue, miles Davis is the ultimate jazz album for people who have not listened to jazz very much.
I really like Salt and Pepper, Sonny Stitt and Paul Gonsalves. it has a Be-Bop rendition of "Lester Leaps in" on the sax rather then the horn (Lester's instrument). Paul Gonsalves is also tied with Bassanova which started to blend with the musicians living in the times of Be-Bop. This album isn't hard bop either, it's more smooth and less chaotic. It's easier for a person to listen to. Once you get into the smoother stuff then I suggest moving to the more progressive stuff.

Ramsey Lewis is another excellent artist. If you are looking to check out the lighter side of jazz called Smooth Jazz one artist (which is a group) when it comes to getting a CD from is The Rippingtons. My favorite CD by them of all time is one called Sahara.

Try some Charlie Hunter. An unique guitarist Hunter plays a custom made eight string guitar. He does a lot of crossover stuff as well. "Bing, Bing, Bing" also has some good sax.
