It doesn't seem to be listed in the Owner's Manual. I see back-up lights, headlights, interior lights, etc. But nothing referencing tail lights or brake lights.

Look in your owners manual, it will tell you. Also, did you have any work done on your radio? If so, sometimes circuits are ran through the radio and if installation of the radio is done improperly sometimes you lose things like parking lights and/or tail lights, dashboard lights and instrument panel lights. Also, is it your tail lights or your break lights? If it's your brake lights then it could be your brake light switch or even a relay, though this one is highly unlikely. I don't know the Odyssey very well.

Honda Odyssey Fuse Box

fuse #47 a 20amp unit in the "Under hood fuse/relay box"

this box has 2 heavy wire going into it
a 120amp fuse next to those terminals and 6 small fuses in the corner (along with other fuses and relays)

#47 is in the middle of the row closest to the terminals.

it handles the ABS, cruise, horns, ignition key light and more.

I'm guessing it is a bulb issue since the horn would be an obvious giveaway and you didn't mention it.

CHECK FOR FUSE LINKS. CHECK UNDER THE HOOD FOR A MAIN FUSE BOX, OR MAYBE YOU JUST HAVE TO REPLACE THE BULB.
