On the truck .Cab off is a waste of time .

a new floor pan can be welded in with the cab still on the truck. make sure the cab is well grounded, and unplug the computer,( if it has one), so you don't fry the electrical system.

You can leave the cab on, it will just be a LOT easier with it off. No frame, driveshaft and stuff in the way.
