I have 4 plants, and since they are still flowering have discovered that I have 2 or 3 too many. Anyone have any good cucumber recipes?????

Pickling them is a good way to save them..but the canning jars and boiling bath container will put you outa few bucks at first..the jars are reusable, only having to buy the seals thereafter. about .99 a dozen i believe..jars about 8 dollars a case with the lids and seals..lids(rings) are reusable...now a good recipe is cucumber salad..simply fresh tomatoes cut in decent size chunks..8ths or so...sliced cucmbers..then add some apple cider vinegar,fresh ground black pepper, and some basil if you like..serve chilled in fridgefor a few hours

We used to have a lot of cucumbers, too. My mom used to slice off the cucumber skins, then chopped them down the middle the long way in half, then chopped everything into slices.
Then she'd just open a can of chicken broth and put everything into a covered pot and slowly boil them with a little salt until the cucumber slices got soft.
It went great with white rice.
Sorry, I don't quite remember the proportions though, except you don't want it to be salty tasting.

pick then when they are six inches long. This gives them best flavor, and much less cucumber to deal with.

Sliced in salad, eaten plain. Sliced for sandwiches.

Give them away. If you pick them small enough you could pickle them.

It gave me a good laugh when I saw that you had four plants. That will be a lot of work. You will be sick of cucumbers by the end of the summer. We can barely keep up with our one plant with a family of 5. Good luck.

Maybe you have neighbors that would love to have some fresh cuccmbers for a salad Or if you have a over abundant amount is there a food pantry that gives food to help people call them I bet they would love fresh vegetables You could make pickles and can them for the winter . Bread and butter pickles are very easy to make Fresh pickled cucumbers are good to .. Good luck and use this as a learning experience .

I love garlic and vinegar slices-put several cups of vinegar with 2 cloves of crushed garlic in a large jar-add sliced cucumbers & dashes each of salt & pepper-refrigerate at least untill cold! I eat mine quick, before the cucumber gets soggy SPICEY! I offered to my family but they say the flavor is too strong for them!
Found out I am pregnant so that might be why I like them sooooooooo much.

Save the juice from a jar of pickles. When the cukes are still small, pick them, slice them up and put them in the pickle jar for a week or so. Voila! More pickles!!

You can also make cucumber salad, put them in regular salad, or just eat them plain with a little salt. Yum!

Give them away, i think everyone likes cucumbers. There is also a relish you can make with cucumbers and peppers.

There are a lot of people around that would love some fresh veggies. We take our excess to the local food bank. That way more get to enjoy it and none goes to waste.
