I think you'd appreciate what Mikhail Pletnev is doing as he is interpreting classical pieces according to some very unorthodox inspiration.

(Freddy Kempf is also breaking new ground in that genre.)

you could additionally try Steve Martland, Erkki-Sven Tüür, Wojciech Kilar, and Wim Mertens. For 'softer' quasi-minimalistic music, try Arvo Pärt, John Tavener, some Górecki, Peteris Vasks, Lepo Sumera and Urmas Sisask.
