If they were packed in oxygen would you feel better?

You are breathing a mixture of 80% nitrogen at this very moment. Oxygen would be worse (as it would cause more rapid degradation of the chips.)

Heck, my favorite beverage (Guinness) as well as a few other pub ales (like Boddington's), use nitrogen in the bubbles rather than CO2.

Nitrogen, yum.

True, the air we breathe is 80% nitrogen.
True, removing the oxygen slows decomposition of the product.
False, breathing nitrogen is not harmful. However, not breathing oxygen for any length of time results in suffocation.
I'm surprised no one mentioned that the potato chips themselves are fundamentally unhealthy. All they are is carbohydrate, fat, and salt. Worse, the flavored ones nearly always contain monosodium glutamate (a borderline neurotoxin). So, staying away from potato chips is a healthy choice, but not because of nitrogen.

Pure nitrogen!??

Are you sure that's true????? Most people who have breathed pure nitrogen for even just a few minutes have DIED!!!!

Think about your question; why would they do such a thing? Chips packed in air don't stay fresh as long as chips packed in air, the oxygen is not good for them! Of course it's safe & healthy, silly, the air you are breathing now is mostly nitrogen!

Air is 80% nitrogen and 20% oxygen, so it's only like packing them with the oxygen removed. It doesn't make them unhealthy, it just removes the chemical (oxygen) which may make them go off more quickly.

It's neither healthy nor unhealthy - it simply preserves them longer and has no effect at all on their food content.
You breathe ~80% nitrogen all the time, unless you smoke or live in LA - which is unhealthy.

The atmosphere is 80% nitrogen. You breath it in and out all day. Nitrogen is not very reactive. Nitrogen is in all proteins.

Your eating potato chips and your worried about the health effects of what they are packed in !!!! I would be more concerned about the health effects of eating deep fryed salted potato slices (chips).
