This is a fun question to answer:
Zeus - If Lawrence Olivier was still alive, he'd be a shoe-in (Did you see Clash of the Titians?) However, I have to go with Al Pacino or Robert DeNiro (giving Al the edge)
Appollo - Leonardo DeCaprio - (I see him as a beardless archer)
Artemis - Cameron Diaz - (they kind of look alike?)
Demeter - Kate Blanchett (watch Lord of the Rings)
Hermes - Johny Depp - (a little of Jack Sparrow crossed with Willy Wonka would be ideal)
Aphrodite - Christina Ricci (as in Black Snake Moan) or
Uma Thurman (from Baron von Muncheiser days -- lots of makeup / computer makeover perhaps nowadays)
Ares - Russell Crowe ( of course)
Dionysus - If Peter O'Toole was younger. Mel Gibson or David Hasselhoff (whichever is out of a job at time of casting - could determine at screen testing)
Hera - Katherine Zeta-Jones
Pan - I have no idea why I picture Paul Schaffer here.
Hephaistos - Christopher Walken (Call me crazy)
Poseidon - Ernest Borgnine (I'm sorry, we have to save money somewhere)

Change the accent and Sean Connery would play Zeus, leo would make a good Apollo, Angelina Jolie would be Aphrodite, Vin Diesel would be Ares, Sarah Michelle Geller could play Artemis and maybe Freddie Prinze could be Hermes, Nathan Lane could be Dionysus, Morgan Freeman could play Poseidon, Kyra Sedgwick could be Demeter and Angelica Houston could play Hera.

Eris(goddess of discord and strife)- Helena Bonham Carter or perhaps Gina Gershon. Though Helena has better hair and weirdness for it, Gershon has a better venomous feel.
