If you have a single control that you turn to get hot or cold, when you first you turn it on, you are opening a cold water valve. Then as you turn it, there is a hot water valve that starts to open, making the water warmer until you turn it far enough that it starts closing the cold water valve and you end up with hot water.

Your hot water heats water to a constant temperature and it runs through the house through one set of pipes. The "cold" water is actually ambient temperature and flows through another set of pipes.

The two sets of pipes meet at your shower and the valves control the amount of water that allowed to mix together. The more hot water in the mix, the hotter it is. The more cold water in the mix, the colder it is.
