Just one is hard....
I'll go with one I doubt very many people have seen, but should definitely check out.
Kill Zone (S.P.L.: Sha po lang). The fight between Ma Kwan (Donnie Yen) and Jack (Jacky Wu) is completely AMAZING. It comes off as a very natural and realistic fight. Both of those men have incredible Martial Arts skills.

The Cinderella Man--When Jim fights Max in the last fight of the movie. Max had killed 2 men in the ring, and Jim's wife begged him not to fight Max....I won't spoil the ending for those of you who haven't seen it. EXCELLENT MOVIE.....especially since it was a true story.
