My mum has read all the Catherine Cookson and she loves Maeve Binchy books, I've read a few and they are very good, they are all set in Ireland.
The top link has some other ideas for books, hope your mum gets better soon and you are a little sweetheart being so thoughtful!

I just read the 3 Agnes Brown books by Brendan O'Carroll. The Mammy, The Chisellers and The Granny. Each is just a short read, 175 pages, but great. About growing up in Dublin. Agnes is a hoot. Or any Stuart Woods or Patricia Cornwell.

Rebecca Shaw's village books are lovely stories, easy to read like Cookson, also she might like Josephine Cox.

The Nanny Diaries.

Any James Herriot is well worth a read even if one has read them all ready. I've read them at least four times.
