Actually, the Redskins meeting the Cowboys in the NFC Championship game has happened twice in 1972 and 1982. TheOnlyBeldin has his numbers right, as far as dates and teams.
It is interesting to note that, in 1982, a strike shortened year, all teams were lumped into one big division in each of the two conferences, yet traditional division rivals met in the championship games in both conferences.
Also, in the ensuing Superbowls, teams from those intradivisional conference championship matchups have gone 7-8. Also, though the NFC only has had five of these games, the NFC East participated in four of the five. Three of those games were played in the 1980's.
Lastly, there have been no such games in the current eight division format. This is likely for numerous reasons, but the fact that only two wild cards versus four division winners puts the odds against such an occurance. Before the last realignment when the Houston franchise was added, there were three wild cards and three division champs in the playoffs from each conference for many of those years.
Don't worry, though, it will eventually roll around again. In the early days of the six division alignment, only one wild card team advanced, producing the first several intradivisional matchups. It is just a lot less likely now. The best chance for the 2007 season would be in the NFC East, which sent three teams to the playoffs last year and has seen many free agent acquisitions in the off-season. meanwhile, the Bears are having their off the field problems and still, some say, have no QB. Besides, the East is the only division where more than one team could even be considered a contender to get past the divisional round, even in the watered down NFC.

My favorite example is when the 1980 Eagles beat the Cowgirls 20 - 7 to make it to the big one. Unfortunately they lost to the Raiders in the Super Bowl but the NFC Championship victory was SWEET!

It usually doesn't happen because the 2nd team out of the division is usually a wild card team, and if they play they usually play in an earlier round.
That would be hot if it did happen.
