This may be a different answer, but how about, "Viva Americana!" I say that because I am a descendant of German Immigrants. My grandmother and grandfather came here with two dollars, one child, and a dream. And that dream was to be an American. They got a job that day sweeping the floors in a New York delicatessen. In time, when the owners retired, they bought the restaurant and hired Americans to work it as a token of their gratitude.

I recommended the name Viva Americana as a way of marrying the cultures of Hispanics with Americans and as a way of saying, "Thank You," to America for being a place where everyone can live the American dream regardless of where they come from. I am neither for nor against the immigration debate. I'll leave that for the politicians to argue over. I am a human being first and an American second and treat ALL as equals on the basis of our humanity.

There used to be a restaurant in Des Moines that was Nacho Mama's - and I always loved that name. There's nothing by that name (or even close) in Vegas now, so don't know why you can't go for that one.
