Medusa, the minotaur is out of the question for me Theseus was one strong guy and he did catch him on a sneak attack so it would be sorta out of the question. And for a not so Fighting strong sorta person it would be Medusa with technology today we could get glasses and weapons to make it easier...but wouldn't it be easier for the Minotaur...

The minotaur. He was a mindless beast. Medusa was one of three sisters who were together, cursed for their vanity.
He's alone, she's got company.
I agree.
Besides, we know what the minotaur was. A bull in the pits of Minos. The slaves gained their freedom by jumping over it holding it's horns. Extremely difficult, but better than stoning.

The Medusa...no question. The minotar is strong, to strong not the mention the fact you have to find your way through a huge labyrinth just to get to it.
With the Medusa if you have a shield to block the arrows and a mirror to show her...you win. The Minotar you actually have to fight, plus make it in and out of the labyrinth without starving to death.

Turning into stone is the most fearful.
These are not physical fights but spiritual struggles.
Medusa, the Gorgon, is a metaphor of madness (Mania / Lyssa). Even of that kind of madness which is regarded as "normality". People turned into stone are not aware of it.
