Yes, I know CPR. On a stranger I would use a kit. The kit contains something like a clothe you place around the persons mouth to be on the safe side just in case the person has aids.

Well for the heimlich you have wrap your arms around the person. But you get behind them. Ball your one fist and place on the sternum, place other hand over fist. Push you hands into the person until the object becomes dislodged. For cpr, make sure person is okay, if they are not and they need cpr. Tilt head back a little bit. Open their mouth. Place cheek near mouth, to make sure they are not breathing. When you've established that they aren't breathing, place heel of one palm on sternum, put other hand over hand on sternum. Pump palms into chest a few times, (I forget how many) then place mouth over victims mouth and breathe into it. then place cheek near victims mouth and listen for breathing. Breathe into their mouth again. Pump chest again. Continue until they are breathing or until help arrives. Before you perform cpr you should always call for help. You can even get certified in cpr. I think you have to contact your local red cross. I think that's what it's called.

I "theoretically" know both of them and probably would perform them on a stranger ... but hypothetical questions always raise my doubt-level
how about rattlesnake-bite with knife-cut and blood-suck/spit?
Much as I might like to say that I would perform like crisis-hero, when push came to shove, how many people's actions would not match their "armchair" words?
I'm not really sure how I'd react

Yes I am certified in both, but have luckily never had to use ether... but if the situation called for it I would defiantly do it.
