it doesn't. Angus is a type of beef, not a part of the beef.

From the Angus, of course. Poor cattle. If you ever visit a slaughter house, you may never eat beef again. I eat a hamburger once or twice a year, so I'm no saint. I do feel guilty about it, not that it brings the cattle back.

An Angus is a particular breed of cattle, like Jerseys and Guernseys. Angus are bred specifically for meat, whilst the others are generally kept for milkers.

Angus is a breed of beef cow; a black cow. The beef comes, not from just a part of the cow, but from the whole angus cow.
