I live in Amsterdam. The best Chinese restaurant is called Nam Kee. But you might be disappointed when you see it. Maybe it is too Chinese? It looks like a ordinary restaurant. You have no time to site quiet, the ambiance is simple. But it is the best, also the best price/quality.
More ambiance you find at the Sea Palace. It is also a very good Chinese restaurant, but you pay more.
They are both in the centre. Nam Kee is near chinatown at the Zeedijk. Sea Palace is floating near the central station.

I live near Amsterdam and visit there often.
There are Chinese restaurants all over town, as it has been the most popular kind of restaurant for a long time.
Most of those are Indonesian Chinese.
You can get Chinese and Indonesian dishes there.
Some Chinese restaurants, (not Indonesian) can be found on the Zeedijk. (This is the road from the Nieuwmarkt towards the station.) They are near the Temple.
In that area of town are more Chinese restaurants and shops that are used by the Chinese, not just the Dutch.

I don't live there, but I visit frequently - four times so far this year. The Sichuan Food restaurant at Reguliersdwarsstraat 35 (near the floating flower market) is probably the best Chinese place I've tried in Europe.
I also like the Wing Kee on Zeedijk street just a couple of blocks from Dam Square. There are a lot of places in Chinatown.
