As summer squash, the shell does not need to harden before you pick it. So, just let it get to the size you want and cut it off...

Smaller sizes hold more sugar, and are tastier

From my experience gardening, It is best to pick yellow squash when they are between 6 to 9 inches and the skin is not hard. Too long, the skin is hard and the flesh is woody and seedy. Too short, you have to use a lot of squash to make a pan.

It kind of depends on what your tastes are. Some people let them get big, like eight to ten inches long, before picking. My mother-in-law and I garden and sell fresh produce at a local Farmers Market, and the big ones sell for a $1 and the little ones only $.50. We like them smaller, to cook and eat. We pick them when they're about six inches long and they are more tender that way. If you leave them on the vine too long, they will get too hard, like the outer shell is too chewy to enjoy. Good luck....I love the yellow-squash time of year!

If you pick it small the seeds will be small. Big seeds in the squash aren't very good. So the small squash won't give you as much to eat but will be the best.

When the squash bloom at the end of the squash has turned dark ( looks dead) it's ready.
