I usually have some very very light on-and-off bleeding for about five days prior to my period, then 3 days of heavy bleeding, and a couple days of tapering off afterwards. I count my period as starting when the flow is heavy and consistent. Is that accurate?

count from the first day you bleed, light or not.

Depends on what your objective is. If you are trying to use natural family planning then get on some birth control. If you are trying to GET pregnant then you might want to count from the very first spots and time conception from there.

I count it the day I see blood, though light, it is still your period.
