Animals will take over their niche in the ecosystem. Whatever their prey was will be spared and their population may increase. Those that preyed on them will be out of a job. They will focus their attention on some other helpless species and wipe them out as well. As far as any earth shaking consequence none will be felt by the rest of the globe. Ditto for the elephants and dolphins.

When the human great ape dies out, all ecosystems might return to the way there were 20,000 years ago. Or, maybe not if too much of it has been destroyed and the global climate can't recover.
