1) They replenish the O2 (oxygen) in the air. Our air is 21% O2. This percentage is maintained by the plants giving off O2 during photosynthesis.
2) They convert the energy from the sun into chemical energy for us to use. Our bodies cannot use the sun's energy to make food so we eat plants which have converted the sun's energy into sugar - or we eat animals which have eaten the plants.

The one that you hear the most about is that plants convert CO2 to oxygen through the process of photosynethesis. We, of course, need oxygen for cellular respiration (the process we use to get energy from food). Also by taking CO2 out of the atmosphere plants reduce the greenhouse effect.
Another less recognized aspect of photosynthesis that plants are producers meaning they convert energy from the sun into a form that can be used by consumers. Animals, like us, can't make our own food. We depend on plants or other animals that eat plants to get energy.

Without plants. . .no producers, which are the ultimate source of biologically useful energy for an ecosystem. (The sun is the ultimate source of energy for the world.) No producers means that herbivores don't have food - then carnivores don't have food - and we don't have chickens/cows/sheep, etc. See a trend?
What about photosynthesis? It gives off oxygen as a byproduct. How is oxygen important for life on Earth?

1. They are autotrophes so they make their own food through photosynthesis and in the process produce oxygen, which we need to fufill our own metabolic needs.
2. They capture energy which is transfered to the animals that eat them (such as cows) and when we eat those animals we are gaining the energy that the plant once collected.
3. WIthout plants we would find it impossible to get the vitimans and minerals we need to survive.
