if i'm writing a story/essay, and i want to say it's 6:30, how would i write it?
would i just say six thirty, six-thirty, 6:30, or what?
and same with 6:35.
would i write six thirty-five or six-thirty-five?

Write it whichever you want to. There is no hard or fast rule.

I have the same problem when I have to say that an x-ray was done again - re-x-rayed! For your problem I'd stick to six thirty and six thirty-five. Keep those hyphens to a minimum and make it easier on the eye. If anyone can advise me on my x-rays as well, I'd be very grateful....

Writing a story where it's perhaps a bit more informal, 6.30/6.35 would be fine. For an essay, I would tend to write six-thirty. You would probably need to add whether it's morning or afternoon, unless the context made it obvious. Hope this helps.

You can use whatever style you want. The main thing is to choose one and use it consistently throughout the piece.
