I overheard an ignorant co-worker say she "hates Americans" I asked her why she's knockin' my country. But I'm planning to follow it up, any suggestions?
I live in Canada by the way.

Tell her not to cross the border to do her shopping, then. We'll manage to live without her bargain-hunting here in the States.
I have nothing against the Canadians, but I find it ironic that they badmouth us and then go home with their cars loaded down with cosmetics, clothing, and stuff that costs a third less here than it does in Canada.

I'd Say - "well u can't do anything about that, so just hate quietly ok. Some of us really LOVE America. So stop hating and next time keep ur ignorant remarks inside ur head. Besides, u can't blame every bad sexual encounter on us Americans. U should try to help out in that area and not leave it up to the man no matter what u heard".

why should it make any difference if it is the Country's birthday or not. there are good and bad things about every country just like there are both good and bad things about each individual, culture, society, ethnic background, political party, Religious Belief System, etc.

(*shrug*) I would ignore it. You "overheard" the comment. It wasn't like she said it to your face. So, you were pretty much eavesdropping...which is tacky. So, be the bigger person, and ignore it.
