My favourite is JB Lully - Absolutely anything composed by him.
Other favourite composers are Debussy - especially the Arabesques, Bach was a genius, Mozart as well, Chopin's etudes, but then I have to agree with the others that Pachelbel's Canon and Orff's Carmina Burana are exceptional!
