Its a trophy of all the killings and proof that the deed was done. You can carry more heads back home after a long hard day of killing then all those bodies.

For as long as humans have had the tools with which to do it, the cutting off of the head signified the transfer of power, or wished-for characteristic, from the victim to the victor, or from the prey to the predator.
In some cultures, the head of an ancestor was and is retained and maintained as a source of strength and wisdom, and/or as a link with the gods or those already in the afterlife.
In our modern western cultures we paint portraits, sculpt busts or take photographs pretty much for the same reasons.

some believe that if the human body is mutilated then when the soul/spirit enters the next plane of existence the soul/spirit must do without the mutilated part. in this case the person would be headless in the next plane of existence.
